Good morning all! Today I have for you a delicious and healthy breakfast choice. When I made this I knew I had to share it with all of you! It’s super easy, healthy, and YUMMY!
Here’s what you’ll need to serve 2:
1 sweet potato
And here’s what you do:
1: Peel the skins of the sweet potato and cube into 1/2 inch to 1 inch pieces
2. Toss the sweet potato cubes in olive oil and salt and pepper and spread on a tin foil lined baking sheet and place in the oven at 425 degrees. Bake for 25 minutes.
3. While the potatoes are baking slice up the avocado and heat up a frying pan with coconut oil or olive oil for the eggs
4. When the potatoes are almost done fry the eggs sunny-side up-keep the yolk runny
5. When the sweet potatoes are done divide up into 2 bowls, place one sunny-side up egg into each bowl, then top with the sliced avocado, 1/2 an avocado for each bowl. When you’re ready to eat break the yolk and mix, letting the yolk cover the potatoes and avocado.
You can always bake your sweet potatoes the night before and keep them in the fridge and heat before serving to cut down on time in the morning. Or you could always have this meal as a lunch! I really hope you enjoy this as much as I did! Let me know if you gave it a go!
