I can’t deny my love for burgers…and the buns they come on…and ALL bread for that matter! So when I want a juicy burger while still staying on the healthy side I call in an alternate. I swap out the carby bread for…wait for it…sweet potatoes! I know..it sounds, well, not as good as a regular bun. Which is what I thought at first too. But when I tried it I actually found I like it better! And, bonus, my husband loves it too! All you need to do is this:

Wash your sweet potato and slice into round pieces about 1/2-3/4 inch thick. Rub coconut oil on a tin foil covered cookie sheet and arrange sweet potatoes. Rub more coconut oil on the tops so the potatoes don’t dry out and sprinkle a bit of salt over them. Bake at 425 for about 15 minutes, covered for moist taters and uncovered for crispier taters. Place the meat with all the fixings in between and you’ve got yourself a healthy burger! And a tasty one at that. Happy eating everyone!
