It’s so easy for me to make sure I get my fruits, grains, and proteins, but sometimes it’s hard for me to figure out how to get my veggies each day. So in order to to make sure I do even on the busiest of days I will use the easiest way I know how to cook veggies…roasting!
All you need to do is chop up your favorites- mine are zucchini, bell peppers, onion, and carrots- and throw it all on a cookie sheet (for easy clean up line with tin foil). Spoon some coconut oil around the pan, salt and pepper the veggies, and add any other spices you like! Squeeze fresh lemon over it all and let the wedges roast with the veggies for an extra kick of flavor! Cover with tin foil and bake at 425 degrees for about 15-20 minutes or until veggies are cooked to your liking. Bring the leftovers to work or save for another meal to make sure veggies are always a part of your day! Happy eating!
