Per a request by a reader, I bring you healthy pancakes! These dense and delicious cakes have protein, fiber, and other nutrients that will give you the fuel you need to start your day, plus the fiber and protein will keep you full for longer. Here’s what you do…

Mix together:

  • 1 mashed banana
  • 1 egg
  • 1/4 cup pumpkin
  • 1 tsp cinnamon
  • 1 1/2 tsp honey
  • 1 tbsp peanut butter
  • 2 tbsp whole wheat flour

Cook on low-medium heat in a non-stick pan with coconut oil. Cook slowly in order to avoid burning and top with the fruit of your choice. Makes about 3 pancakes. Happy eating!
