Hi all!

Looking for the perfect pairing for those turkey burgers on my last post? Well here it is! This gorgeous salad comes from the kitchen of Giada and is a great side salad for a Labor Day grill out this weekend. It’s fresh, it’s healthy, and it’s a sure fire crowd pleaser!

Here’s what you do:

Combine:

4 cups red quinoa (I used regular quinoa)

1/2 cup cored, seeded and diced red bell pepper

1/2 cup cored, seeded and diced yellow bell pepper

1 cup well-rinsed and drained black beans

1 cup roasted corn kernels (I used canned corn)

1 cup chopped fresh cilantro leaves

1/2 cup chopped red onion

1 small jalapeΓ±o chile, seeded and finely minced

Once combined pour in this dressing after mixing these ingredients in a food processor:

1 tbsp finely minced garlic

1/2 cup fresh lime juice

1/2 cup extra-virgin olive oil

1 rounded tbsp agave syrup

1 tsp salt

1/2 tsp ground black pepper

1/2 tsp crushed red pepper flakes

 

When you’re ready to serve toss in 3 cups baby arugula and dish up! This serves a crowd of about 12 people easily and is so simple to make! Store in the fridge afterwards for some yummy leftovers.
