I don’t know about you, but after the holidays I feel like my body was used as a trash can to dump all of the worst food imaginable in. Turkey, ham, pie, potatoes loaded with butter, cookies, green bean casserole…you name it, I gorged myself in it. So when I came home feeling crumby, I wanted to do something good for my body. My go-to ultimate healthy meal is super easy and great tasting. All you will need are these ingredients:
- 1 sweet potato, peeled and chopped
- 2 chopped carrots
- 2 chopped bell peppers (color of your choosing)
- 1-2 chopped zucchini
- 1 cup quinoa
Start bringing the quinoa to a boil, then turn the heat to low-medium to let it simmer until the quinoa is done cooking. I personally like to cook my quinoa in chicken broth to give it some flavor, but water works as well. While your heart-healthy whole grains are cooking, start heating up your large pan with coconut oil (see previous post about why coconut oil is my oil of choice) and add the sweet potatoes and carrots first. Sautee these for a bit since these take longer to cook, and then add your bell pepper and zucchini. As these are all cooking add some salt, garlic powder, and oregano to taste. When veggies are cooked to your liking add the quinoa and poof! A healthy dish that you feel great about that is de-lish! You can never go wrong with too many veggies!
