Sometimes you just want a hearty meal that really fills you up. Especially in the winter! Something warm and cozy. My veggie goulash is my go-to simple, healthy, and hearty meal. Here’s what you’ll need:

  • 1 lb ground beef, browned
  • 2 cups whole wheat noodles, cooked
  • 1 small can tomato paste
  • 1/2 cup red onion, chopped
  • 1 bell pepper, chopped (any color)
  • 2 small-medium zucchini, sliced and then halved
  • 3 whole carrots, chopped
  • Salt and pepper

In a large pan heat 1 tbsp coconut oil, then add carrots.Β SautΓ© over medium heatΒ for about 3 minutes, then add onion, pepper, and zucchini. Cook for about 10 minutes or until veggies are soft but not overcooked. Salt and pepper veggies. Take off heat and add the beef and noodles, then add tomato paste, stirring until goulash is coated evenly.
