This week I have another recipe coming your way. Last year my husband and I, along with another couple, embarked on the Whole30 journey. Now, for those of you who have never heard of Whole30, it is a 30 day diet that is supposed to basically reset your gut. Let’s just say it was a long 30 days, but we made it through and I have truly never felt better than after that month. But more on that later…the meal I am bringing to you today was a staple in our household during the Whole30, and I hope you enjoy it just as much as we did and still do! All you need is a whole chicken, red wine vinegar, and whatever veggies you desire!

I start by placing the chicken in either my dutch oven or my turkey roasting pan and douse it with red wine vinegar, leaving some in the bottom of the pan. Add a bit of water so the bird doesn’t dry out. Then I’ll salt and pepper it and maybe even add some rosemary. Then I take all my chopped veggies (I usually use sweet potatoes, onion, and carrots) and toss them in the pan. Bake it (covered) for about 20 minutes per pound of bird at 350 and soon you’ll have a sweet smelling house and a yummy tasting meal. You really can’t go wrong with this meal! Bon appetit!
